As promised earlier this morning... here's what I made for dinner tonight... and how one would recreate it - although I sense it might be a bit like George's Marvellous Medicine...
It's a bit of a kedgeree chowdery thingy... this is for feeding one really hungry person - I'd feed two less hungry people, although I'd put all of the tomatoes in if I was doing that...
- a small tin of salmon
- a pepper
- an onion
- some oil
- 1/2 cup of rice
- garlic puree
- 1/2 tin of chopped tomatoes
- erm, chilli power, ginger power and garam masala, oh and some lemon juice
- Lightly fry half of the onion (diced), garlic puree and some ginger powder in a pan for about 2 minutes.
- Add some garam masala and the peppers fry for a further two minutes.
- Add the tomatoes and salmon (keep the brine elsewhere) leave to simmer.
- In another pan lightly fry the rest of the onion and rice with some chilli powder, for erm, 2 minutes I guess...
- Add a cup of recently boiled water and the brine from the salmon. Put the lid on the pan and leave it boiling away, until it stops making the boiling sound and you know that the rice is done.
- Add some lemon juice to the fish stew thing.
- I think it's done... merge the contents of the two pans in a number layers on a plate.
- Eat it!
I would have a photo to show you... but I accidently ate it all before I remembered to take it.
Once again I'm not sure what I'm going to have tomorrow. I'm guessing that it's going to involve 1/2 a tin of chopped tomates though... and probably some pepper as it's going off... probably some potato too... hmmm...
